Bean and Cheese Enchiladas
Ingredients:
1 TBSP olive oil
¼ cup diced red pepper
¼ cup diced onion
2 cloves minced garlic
1 15 oz can black beans (no salt added), drained and rinsed
1 egg, lightly beaten
¾ cup bread crumbs
1 TBSP NewBank’s Tucson Taco Salt-Free Seasoning
6-8 flour tortillas (depending on the size of your baking dish)
green or red enchilada Sauce (lowest sodium available)
queso fresco
sour cream
shredded lettuce
cilantro
Steps:
Saute onion, pepper, and garlic until browned, set aside
Mash beans with fork or pulse in blender until fairly smooth
Combine onion, peppers, garlic, beans, egg, breadcrumbs, and seasoning and mix well
Pour a layer of enchilada sauce into the bottom of your baking dish
Separate mixture into 6-8 equal parts and portion into tortillas, adding cheese as you go.
Arrange your enchiladas in the baking dish and top with more enchilada sauce
Top with more cheese and bake for 15-20 min at 350°
Serve topped with sour cream, shredded lettuce and cilantro
