Creamy Cajun Pasta

Ingredients:

1 lb penne

2 boneless skinless chicken breasts

2 Tbsp NewBank’s Catalina Cajun Seasoning

1 Tbsp olive oil

4 Tbsp unsalted butter

1 medium yellow onion, diced

1 14 oz can diced tomatoes (no salt added)

1½ cup heavy whipping cream

½ grated parmesan 

2 Tbsp cream cheese

Fresh chives or parsley

Steps:

Cube chicken and coat with 1 TBSP Catalina Cajun seasoning, tossing to cover completely, use more if desired

Heat olive oil and 2 Tbsp butter in a large skillet until very hot and butter is melted and foamy

Add seasoned chicken to skillet and cook all the way through, until no pink remains, remove from skillet and set aside

Add pasta to boiling water

Add remaining butter to skillet and sauté onions, scraping up the brown bits on the bottom

*Add tomatoes and garlic and cook for additional minute or so

Add heavy whipping cream and 1 TBSP Catalina Cajun seasoning and bring down to a simmer for a minute or two

Add parmesan and cream cheese and stir until melted

Add pasta and and mix until incorporated (*reserve some pasta water in case sauce needs thinning)

Return chicken to pan and toss

Top with fresh herbs and more parm
