Chicken Gyros
Ingredients:
1 lb boneless skinless chicken breast
NewBank’s Desert Grecko Salt-Free Seasoning
Juice of one lemon
1 TBSP olive oil
3 cloves of garlic
Pita Bread
Spinach
Feta
Sauce:
½ finely chopped cucumber
½ cup fat-free plain yogurt
⅓ cup light sour cream
1 TBSP chopped fresh dill weed (dried is fine too)
1 TBSP fresh lemon juice
2 cloves of garlic, minced
¼ tsp pepper
Steps:
Stir together sauce ingredients and refrigerate while preparing chicken
Cut chicken into strips and place in a mixing bowl, rub with NewBank’s Desert Grecko Salt-Free Seasoning until thoroughly coated
Add Juice from 1 lemon, olive oil, 3 cloves garlic and toss together
Let marinate for 10 to 30 minutes
Arrange chicken on a foil lined baking sheet and broil for 10 minutes, flipping halfway (keep an eye on it because every broiler is different)
When chicken is done, assemble gyro with pita, spinach, feta and more black pepper
